Ingredients

Salad Recipe

  • 1/2 big crispy lettuce (cut big)
  • 1/2 cucumber (half slices)
  • 4 radishes (slices)
  • 2 small spring onions (slices)
  • 10 kalamata olives (or as needed)
  • lime juice (freshly squeezed from 1 lime slice)
  • pinch of salt (I used unrefined mountain salt)

Guacamole Recipe

  • 1 medium avocado (skin and seed removed)
  • 10 kalamata olives (no seed, slices)
  • 1/2 spring onion (chopped)
  • lime juice (as needed, fresh from the lime)
  • 1/2 tsp salt (I used unrefined mountain salt)

Instructions

Salad

  • Prepare all salad ingredients as indicated in parenthesis.
  • Add them into a medium sized bowl and mix a bit to combine everything nicely.
  • That’s it! Serve with the following Guacamole recipe.

Guacamole Recipe

  • Add avocado, sliced olives, chopped spring onion, salt and lime juice, to a medium sized bowl.
  • Using a fork or a small blender, combine everything into a paste. Don’t worry if it takes 1 minute or 5 minutes to make the guacamole. Note that using a creamy avocado should help a lot.
  • Serve alongside your favorite salad, and optionally enjoy with a few slices of healthy bread.

    Simple salad for those hot summer days … we simply loved how GREEN it was and decided to try it. My husband bought sourdough bread and we ate this guacamole salad with a few slices of sourdough, and it definitely was great!
