Check-out this tasty fall smoothie made with beet, berry and cauliflower, plus other veggies, a few fruits and superfood spices. It’s quite a different recipe from your average smoothie but it also refreshing, tastes and looks amazing, and it’s super healthy as well.

Both me and my wife enjoyed this smoothie and decided to share it with you. This vegetable fall smoothie was:

Ingredients list

When it comes to the ingredients used for this fall smoothie, we might as well have used the entire pantry. Seriously now, we used quite a few plants in this smoothie, simply because we wanted to blend a special smoothie to celebrate the fall season.

In fact, many of our smoothies are loaded with plants (and vegetables in particular) and this smoothie was no exception either. We simply love plants and we think that they’re good for us (and for you too!).

These are the ingredients that we used for blending this refreshing vegetable fall smoothie:

  • Avocado – comes packed with healthy fats and fiber, plus micro and macro nutrients
  • Cauliflower – one of the cheapest superfoods, in my opinion
  • Polka Beet – they are in season in the fall, plus they literally come packed with lots of real nutrients
  • Carrot – we tend to use carrots in every smoothie because they are cheap to buy but also super healthy to consume (especially when used raw)
  • Fennel – we absolutely love the sweet-ish taste of fennel but also its nutrient-rich contents
  • Celery Stick – celery goes hand in hand with fennel in almost all our recipes (not only smoothies)
  • Mixed Berries (fresh or frozen) – we couldn’t skip berries so for this smoothie we decided to go with mixed berries (blackberries, blueberries and raspberries) which are in season in the fall
  • Extra Virgin Coconut Oil – comes with lots of different types of healthy fats that all your cells need daily
  • Ginger Powder – one superfood that we use almost every day
  • Turmeric Powder – another superfood that we’re in love with
  • Chia Seeds – one of my favorite ways to add even more health benefits (including healthy fiber) to our smoothies
  • Himalayan Salt – a pinch of salt goes a long way for balancing the taste of a smoothie
  • Lime (juice only) – we used the juice from a lime but, should you decide on using the skin as well, go for on organic lime
  • Water – use as much as needed based on your blender size

Beet Berry Cauliflower Refreshing Fall Smoothie

Start your day with this refreshing fall smoothie made with beet, berry and cauliflower, plus other veggies, a few fruits and superfood spices.  Enjoy your health, friend!

Equipment

  • Blender

Ingredients

  • 1 big avocado (skin and seed removed)
  • 1/4 fresh cauliflower (remove stalk)
  • 2 small polka beets (peeled and cut)
  • 2 carrots (peeled and sliced)
  • 1 slice fennel (chop big)
  • 2 stick celery (chop big)
  • 200-250 g mixed berries (blueberries, raspberries, blackberries)
  • 2 tbsp extra virgin coconut oil
  • 1 tsp ginger powder
  • 1 tsp turmeric powder
  • 4-5 tsp chia seeds
  • 1/2 tsp Himalayan salt
  • 1 lime (juice only)
  • 650-700 ml water

Instructions

  • Prep and add all the ingredients into your blender. Add enough water to level everything.
  • Blend on medium to high until everything looks creamy.
  • Serve fresh or store in the fridge for 2-3 days.

Notes

  • Color: dark pink strawberry color
  • Texture: well mixed, creamy (had bubbles), some berry seeds left unmixed, a bit of cauliflower texture
  • Taste: sweet and a bit sour (depends on the berries), a bit of cauliflower taste, refreshing asian spices aftertaste
