  • Fruits: avocado, apple
  • Vegetables: cucumber, carrot, red beet, bok choy, fennel, frozen green peas, frozen green beans, frozen broccoli
  • Seeds: chia seeds
  • Boosters: turmeric powder, cardamom powder, fresh ginger
  • Others: extra virgin coconut oil, lemon, coriander seeds

Equipment

  • Blender

Ingredients

  • 1 avocado (skin and seed removed)
  • 1/2 cucumber fabio (sliced)
  • 3 small carrots (peeled)
  • 1 red beet (peeled snd cut big)
  • 1 bok choy (chopped)
  • 1 apple (seedless)
  • 1 slice fennel (chopped)
  • 3-4 tbsp lightly boiled green peas + green beans (from frozen)
  • 150 g frozen broccoli
  • 1 tbsp extra virgin coconut oil
  • 4 tbsp chia seeds
  • 1 tsp turmeric powder
  • 1 tsp cardamom powder
  • 1 slice lemon
  • fresh ginger (as needed, chopped)
  • 600-700 ml water
  • decorated with coriander seeds

Instructions

  • Add everything into your blender, including water.
  • Blend on medium to high until everything looks smooth and creamy. If it looks too thick, just add more water and mix again.
  • Serve fresh or store in the fridge for 2-3 days.

Notes

  • Color: red with yellow accents
  • Texture: very thick, well mixed, some seeds, lots of pulp from the apple
  • Taste: distinctive red beet aroma but not too sweet

This can be a big smoothie so you’ll need a rather big and powerful blender to mix everything smoothly.
I used frozen green peas and green beans that I lightly boiled and cooled down at room temperature. For simplicity you can just use frozen green peas and frozen green beans.
In case you want to use the slice of lemon with skin, make sure to use an organic lemon. Conventionally grown citrus fruits are often sprayed with pesticides and so their skin gets contaminated with chemicals.
