Check-out this vegetarian breakfast plate that you can easily prepare in under 5 minutes. If you love guacamole, olives, peppers and Danish cheese, then this plate might be for you. No cooking skills required, only fresh ingredients and a meal that’s loaded with plenty of real food nutrients.

I want to tell you a secret: I’ve prepared this plate in my hotel room! Ta-daa …That’s right! Since it doesn’t require any kind of “regular” cooking, this recipe is perfect for such “occasions”. You’ll have to make your own guacamole, cut some vegetables and slice the cheese, but that’s about it in terms of cooking skills.

Ingredients

  • 2-3 tbsp homemade guacamole
  • 3-4 slices kapia or bell pepper
  • 4 slices Danish cheese (I used Esrom cheese)
  • 10 Greek olives (salty, with thyme and evoo)
  • 5 slices leeks
  • 3-4 picked cucumbers (picked in brine)
  • 2 slices healthy bread

Instructions

  • Prepare all the ingredients as indicated - see my homemade guacamole recipe or be creative with your guacamole.
  • That’s it! Serve with love and share with someone you love.
