Ingredients list

In a nutshell, these are the ingredients that youā€™ll be using for putting together delicious vegetarian stuffed pitas like these:

  • Moroccan Pita Bread (homemade or store bought)
  • Cucumber
  • Tomato
  • Bell Pepper
  • Mozarella Cheese (Italian cheese)
  • Yellow Cheese (ideally from Scandinavia)
  • Butter (just a bit, unpasteurized if possible)
  • Full-Fat Sour Cream (just a bit, unpasteurized if possible)
  • Fresh Dill

Pro Tip: Feel free to play with the quantities and the ingredients list. I truly believe that, when it comes to sandwiches and stuffed pitas, there is no strict rule for the quantity of ingredients that one should use. Give yourself room for creativity and youā€™ll be surprised of the results!

Reasons to try our Vegetarian Stuffed Pitas recipe

These delicious vegetarian pitas will bring into your home an assortment of classical European flavors that weā€™re so lucky to have access to these days. In the following paragraphs Iā€™ll briefly explain how different European cuisines inspired my choice of ingredients for these stuffed pitas:

  • I took the simple raw vegetables used in the Mediterranean and East-European cuisines, and used them as the base for our stuffed pitas.
  • Using the well-known Italian mozarella cheese brings home the moist flavor of this classic Italian cheese. The delicate flavor of mozarella cheese will lift up these stuffed pitas to a whole new level of deliciousness.
  • Next, I decided to use a special kind of soft yellow cheese that comes from the Scandinavian cheese makers. Itā€™s a traditional type of cheese made commonly in Denmark and Norway, a type of cheese prepared using milk that comes from pasture-raised cows. The taste of Scandinavian cheese is always fresh and refreshing, while its smooth texture will pair perfectly with the rest of the ingredients used in our pitas.
  • Lastly, I love how the French use butter and full-fat sour cream in their sandwiches as a way to boost flavor, especially when used together with warm bread. Weā€™ll be using soft butter and full-fat sour cream on the inside of our warm pitas, just before adding all other ingredients.

Pro Tip: Instead of the type of yellow cheese that I used (Scandinavian soft yellow cheese) you can definitely go for cheddar cheese. Cheddar cheese comes from the UK and itā€™s somehow similar to Scandinavian yellow cheese, but with a slightly different taste and texture.

Ingredients

  • 3 Moroccan pita breads (homemade or store bought)
  • 1/2 cucumber fabio (long cucumber, sliced)
  • 2 tomatoes (sliced)
  • 1/2 bell pepper (sliced)
  • 125 g mozarella cheese (1 mozarella ball, big slices)
  • 200 g yellow cheese (use Scandinavian or Cheddar cheese)
  • fresh dill (as needed, chopped)
  • a bit of butter (as needed)
  • 50 g full-fat sour cream

Instructions

Stuffed Pita Version 1

  • Cut warm pita bread in half.
  • Add sour cream on one side. Sprinkle chopped dill over the sour cream.
  • Add slices of fresh veggies: tomato, cucumber, bell pepper.
  • Add mozarella slices over veggies.
  • Finish by adding yellow cheese and top it with more fresh dill.

Stuffed Pita Version 2

  • Cut warm pita bread in half.
  • Spread butter on one side on the pita bread.
  • Add a few slices of mozarella cheese.
  • Add raw veggies: tomato, cucumber, bell pepper.
  • Add yellow cheese over veggies.
  • Finish by adding fresh dill on top.

Notes

You can make Moroccan pita breads yourself or use store bought pitas. No matter the choice, stay away from additives and preservatives that are too common these days.
We used homemade pitas that my wife prepared from scratch using spelt flour. The spelt flour is responsible for the dark-ish color of the pitas - they tasted amazing though.
Make sure to warm the pitas before stuffing them. This way the butter and sour cream used on the inside will slowly melt, thus transforming the taste of this pita sandwich.
In case you canā€™t find Scandinavian yellow cheese where you live, use sliced cheddar cheese which is more commonly available.
