Delicious, healthy and fresh, this Superfood Immune Booster Smoothie was slightly bitter (in a good sense), plus thick and creamy. I like how this fall smoothie turned out in terms of taste, texture and color, and I also like that it’s literally packed with immune boosting plants.
This immune booster smoothie was pure superfood, healthy and awesome, and we absolutely loved it. It was:

What goes into our Immune Booster Smoothie
This delicious superfood fall smoothie is certainly different compared to your average smoothie. It all starts with using plenty of healthy ingredients!
This superfood immune booster smoothie comes packed with lots of nutrients from using an assortment of plants such as macadamia nuts, broccoli, beetroot, other veggies, a few low-carb fruits and berries. The combination of these healthy ingredients makes for a smoothie that is packed with quality fats, low in carbs and perfect to strengthen one’s immune system during the cold season.
These are the ingredients that go into our superfood immune booster smoothie:
- Macadamia Milk – you’ll get to make your own macadamia milk and you’ll be using about 100 ml of macadamia milk as the base for this smoothie
- Avocado – packed with healthy fats, potassium, magnesium, as well as other micronutrients, and perfect for obtaining that creamy texture
- Grapefruit – a delicious source of vitamin C, as well as fiber, plus lots of different groups of antioxidants
- Bell Pepper – comes with different vitamins, as well as different types of antioxidants
- Kale – lots of vitamins, minerals and antioxidants, plus a bit of protein and omega-3 fatty acids
- Fennel – rich in vitamin C, magnesium, iron and calcium, as well as fiber, fennel has a sweet taste that goes perfectly in all kinds of smoothies
- Leeks – contains many flavonoid antioxidants, minerals, and vitamins that have proven health benefits

- Cranberries (frozen) – these small red berries are high in vitamin C, healthy fiber, as well as phytonutrients and antioxidants
- Carrot – you get a large spectrum of vitamins and minerals, plus antioxidants and fiber
- Broccoli (frozen) – rich in vitamins and minerals, healthy fiber, as well as antioxidants
- Hemp Seeds – have healthy fats and are a good source of protein, plus a good source of minerals and vitamins
- Red Beet – another nutrient powerhouse, rich in antioxidants and essential nutrients, as well as gut-friendly fiber; perfect to use in smoothies where you’ll get to consume it raw
- Lemon – I used two slices of organic lemon with skin
- Wheatgrass Powder – one green superfood powder rich in chlorophyll
- Raw Cacao – for best aroma and high level of phytonutrients, use raw cacao from fairtrade sources
- Turmeric Powder – highly potent superfood and part of the ginger family of plants, with its biologically active compound called curcumin
- Cinnamon Powder – cinnamon is another superfood high in phytonutrients
- Ginger Powder – high in phytonutrients, alternatively you can use a bit of fresh ginger
- Cardamom Powder – another superfood high in phytonutrients, somewhat similar to cinnamon in taste and color
- Parsley (dried) – I used just a hit of dried parsley (can also use fresh)
- Himalayan salt – use a bit of quality salt to balance those healthy fats from avocado and macadamia milk
- Water – we use water for making the macadamia milk and for the smoothie itself (see recipe card for details)
How to make macadamia milk at home
In order to make your own macadamia milk, you’ll need 3 things:
- Macadamia Nuts (without shells)
- Water (always use pure clean water)
- Blender or Kitchen Robot (high power)
Here’s my simple recipe for making homemade macadamia milk:
- Start by using 200 ml water for every 100 grams of raw macadamia nuts. You can add more water at any time later, if needed.
- Add macadamia nuts into the blender. Next, add the water required, based on my instructions above.
- Blend on medium to high speed until mixture seems well combined. You’ll know the macadamia milk is ready when the blender contents will turn white.
- You can use the nut milk as is (with pulp) or you can strain it, separating the pulp from the liquid. Save the pulp for baked goods or add it to raw desserts.
- Done! Now you can simply add all the smoothie ingredients on top of the macadamia milk, add all other ingredients, add a bit of water and blend your smoothie as usual.

Fall in Norway, Superfood Immune Booster Smoothie
Equipment

Ingredients
- 1/2 jar macadamia milk (100-125 ml, see recipe in the post above or the Instructions section)
- 2 avocado (skinned and seeded)
- 1/2 grapefruit (no skin)
- 1 yellow bell pepper
- 3 leaves kale
- 2 stalks fennel
- 5 cm leeks
- 5 tbsp frozen cranberries
- 2 carrots
- 200 g frozen broccoli
- 2 tbsp hemp seeds
- 1 red beet (peeled and cut big)
- 2 slices lemon (skin included, organic)
- 1 tbsp wheatgrass powder
- 1 tbsp raw cacao
- 1 tsp turmeric and cinnamon powder
- 1/2 tsp ginger and cardamom powder
- 1 tsp dried parsley
- 1/2 tsp Himalayan salt
- 600 ml water (on top of the macadamia milk)
Instructions
Macadamia Milk
- Start by preparing the macadamia milk: add macadamia nuts into the blender, followed by adding the water required for making the nut milk.Note: Use 200 ml of water for every 100 g of macadamia nuts.
- Blend on medium to high speed until all the macadamia nuts have been transformed into milk. You’ll know the macadamia milk is ready when the blender contents will turn white.
- You can use the macadamia milk as is (with pulp) or you can strain it, separating the pulp from the liquid. Save the pulp for baked or raw low-carb desserts.
Smoothie
- Wash and prep all the ingredients, remove skin, seeds and cut into pieces as needed.
- Add all ingredients into the blender (on top of the macadamia milk), followed by adding the water required for making the smoothie.
- Blend everything on medium to high speed until you obtain the desired consistency.
- Serve fresh or store this smoothie in the fridge for maximum of 2 days.
Notes
- Color: light brown
- Texture: very thick and creamy, actually too thick
- Taste: slightly bitter (in a good sense) from all the cranberries and grapefruit used
Due to using freshly-made macadamia milk, this smoothie must be stored in a refrigerator at all times, making sure to consume it in max 2 days. For this recipe you’ll be using lemon with skin. Make sure to use an organically grown lemon or, in case of using a non-organic lemon, remove skin prior to using in smoothie. Conventionally grown citrus fruits may be sprayed with pesticides that remain in the skin even after washing.
