How I made this delicious vegetable smoothie

This is a smoothie made using all the leftovers from the previous day plus everything we had in our fridge in terms of plants. That’s everything except avocados, as we seem to always have too many of those around the house.

As always, healthy fats are part of the base for our smoothie. In fact, this is one of our goals when we start making smoothies … we try to include at least two sources of healthy fats in every smoothie recipe. As a general rule, healthy fats can come from avocado, extra virgin coconut oil, nut milks (macadamia, cashew or almonds), nut butters, chia or hemp seeds (more like a secondary source) or even extra virgin olive oil (also as a secondary fat source).

Some protein will be needed as well and, in this smoothie, protein comes mainly from cauliflower. It’s worth noting that protein could have easily come from other sources like spinach, broccoli, green beans, green peas or even hemp seeds (or hemp protein powder). For this recipe we are using frozen cauliflower and this makes for a more refreshing drink (the same is true when using frozen spinach, broccoli, green beans or green peas).

Maybe the most important rule is to make sure that you include as many vegetables as you can. Why? Simply because veggies are literally packed with vitamins, minerals, enzymes, gut-friendly fiber and lots of different types of phytonutrients. Vegetables will add plenty of soluble and insoluble fiber to your diet so your gut bacteria will thrive, keeping your immune system working perfectly.

Let’s not forget that a healthy body starts in the gut and a unbalanced gut flora will eventually lead to disease. Vegetables are a great way to keep your gut floare healthy, and this in turn will help keep your whole body healthy.

Ingredients

  • 4-5 frozen cauliflower bouquets
  • 1.5-2 avocados (skin and seed removed)
  • 1/2 grapefruit (peeled)
  • 2 slices fennel
  • 1/2 stick celery
  • 4-5 leaves spring cabbage
  • 2 bananas (skinless)
  • 1 red beet (peeled and cut big)
  • 1-2 tbsp frozen cranberries
  • 4 tbsp frozen sea buckthorn
  • 1 tbsp extra virgin coconut oil
  • 2 tsp raw cacao powder
  • 2 tsp pomegranate powder
  • 1 tsp dandelion powder
  • 1 tsp ginger powder
  • 1 tsp cinnamon powder
  • 1 tsp dried parsley (optional)
  • 700 ml water

Instructions

  • Add everything into your blender, including water.
  • Blend on medium to high speed until texture looks smooth and creamy. If it looks too thick, add more water and blend for 10-20 seconds more.
  • Serve fresh or store in the fridge for 2-3 days.

  • Texture: watery, creamy, easy to drink
  • Taste: sweet with a cauliflower aftertaste, nice to drink
