I love this recipe because it’s super simple to put together and comes packed with lots of fresh vegetables, healthy fats and quality proteins, plus all the micronutrients they bring to the table.

Ingredients for Big-Small Pomegranate Salad

Make keto salad with pomegranate is made with your own choice of:

  • leafy greens
  • tomatoes
  • hard boiled eggs
  • bell peppers
  • green onions
  • chili and jalapeños
  • pomegranate seeds
  • freshly squeezed lime juice
  • half of avocado on the side

How to serve this keto salad

This easy salad is delicious to eat on its own or as a side with your favorite lunch or dinner. Plus it works great as grab and go breakfast for those busy days in the city, and it’s perfect all summer long.

My recipe makes for 2 servings like the one in my pictures. One serving should be enough for one person, especially if you pair it with something else.

Equipment

  • Salad Bowl

Ingredients

  • leafy greens of your choice (lettuce, baby spinach, cabbage)
  • 2 tomatoes (slices)
  • 3 hard boiled eggs (cut in half)
  • 1 red pepper (cubed)
  • 1-2 spring onions (scallions, chopped)
  • 1/2 chili pepper (chopped)
  • 1/2 jalapeño (chopped)
  • pomegranate seeds (as needed)
  • fresh lime juice
  • 1/2 avocado (seedless and sliced, optional)
  • pinch of Himalayan salt (optional)

Instructions

  • Prepare all the ingredients as indicated and add them to your salad bowl.
  • Add lime juice and optional salt.
  • Mix a bit to spread everything nicely.
  • That was it! Serve and enjoy all day long!

Notes

Feel free to use your favorite type of leafy greens. Check-out a few of my favorites: romaine lettuce, iceberg lettuce, red leaf, frisee, nappa cabbage, spring cabbage, baby spinach.
