Addicted to smoothies

I must confess that I am addicted to smoothies. I blend myself a fresh smoothie every day and I’m grateful for being able to do it. These smoothies helped me so much with transforming my way of eating towards vegetarian plant-based. Now, after more than 1 year of drinking daily smoothies, I can safely say that I wouldn’t go back to the way things were before.

Why do I like smoothies, you may ask? Well .. I like smoothies because they have taught me to really appreciate plants. That’s when I started to believe that plants can help me to heal my body. It’s funny, but it was only when I started to combine all these plants together, that’s when I discovered what makes each of them special in terms of taste, nutrients and health benefits.

I also like smoothies because smoothies a great excuse to consume raw plants that come with real vitamins, minerals, enzymes, phytonutrients and healthy fiber. Making my own smoothies helped me so much by transforming my gut microbiome in a positive way. I wouldn’t even consider getting back to eating “that kind of food” that I was eating before.

In fact, smoothies can be so powerful that you’ll start thinking twice about eating anything that it’s not up to the standards of your smoothie. All of a sudden your cravings will simply disappear because few things can ever compare to the taste and the energy boost that a real smoothie will give you.

Junk food, fast food, sugar, sugary treats, cake, chocolate bars, etc all of these won’t matter anymore. Why? Simply because these “foods” cannot compare with the positive boost of energy that you will get from a real smoothie.

This beet and grapefruit smoothie was very easy to blend, it’s delicious and turned out creamy, just the way we like it. It’s loaded with many different nutrients and has a double taste: beet and grapefruit.

Equipment

  • Blender

Ingredients

  • 1 avocado (skin and seed removed)
  • 1 small red beet (peeled and sliced)
  • 2 slices grapefruit (or 1 mandarin, peeled)
  • 2 slices fennel
  • 2 big prunes (seedless)
  • 100 g frozen spinach
  • 3 carrots
  • 1 apple (sweet and sour, seedless)
  • 1 tsp turmeric + ginger powder
  • 2 tsp extra virgin coconut oil
  • 2-3 leaves fresh basil
  • 1/2 tsp Himalayan salt
  • water (as much as needed to cover ingredients)

Instructions

  • Add everything into your blender. Add enough water to level the ingredients.
  • Blend on medium to high until everything looks creamy.
  • Serve fresh or store in the fridge for 2-3 days.

Notes

  • Color: pink and orange
  • Texture: creamy, easy to drink
  • Taste: beet + grapefruit, not spicy at all

When it comes to the apple, you may want to use an apple that is on the sweet side. Using a Granny Smith apple may not be the best option for this smoothie.
When it comes to water, use as much water as needed to cover the ingredients and a bit more. Less is more here! Add enough water but don’t over do it, as you can always add more water if your. blender has trouble mixing everything.
