This Berry Coconut Dessert Bowl is the perfect quick morning meal or refreshing snack! This gluten-free and refined sugar-free dessert bowl takes just a few minutes to prepare, but it’s also healthy and delicious.

Ingredients needed

You’ll only need 3 simple ingredients for making this delicious raw bowl:

  • Frozen Blueberries – No matter if used fresh or frozen, blueberries are a nutritional powerhouse and should be consumed by everyone. We used frozen wild blueberries for this dessert, but you can definitely use fresh blueberries if you want. When it comes to health benefits, my main focus when consuming berries is their wide phytonutrient profile which, along with fiber, gives berries their superfood status.
  • Banana – A true nutritional powerhouse, bananas are rich in potassium and magnesium, vitamins and phytonutrients, as well as dietary fiber. Banana will add sweetness to our dessert and will easily keep you nourished and full for longer.
  • Coconut Chips – Packed with healthy fats and fiber, coconut chips will add crunchiness and that special coconut flavor to our refreshing raw bowl. You won’t need to use much either as these coconut chips are quite satiating and actually a bit dry. Use coconut chips that are free of any kind of additives.

This refreshing dessert bowl can be upgraded!

Not only this berry coconut dessert bowl is delicious by default, but you can easily upgrade it or even transform it into a totally different culinary experience. Here are a few of my ideas:

  • Dark Chocolate – Upgrade the flavors by mixing in a few squares of quality dark chocolate.
  • Apple Slices – Are you looking for more fiber and natural sweetness? Nothing easier than throwing in a sliced golden apple.
  • Other Frozen Berries – For variation and different nutrients you can definitely use cranberries, blackcurrants, or raspberries. I encourage you to be creative and experiment with different kinds of berries.
  • Fresh Berries – Maybe you’re preparing this bowl at a time when fresh berries are in season. Well … feel free to use fresh berries instead of frozen berries.
  • Dried Fruit – For more sweetness and electrolytes you can use either dates, figs, or raisins. Stay away from any kind of additives like sugar or oils, as well as preservatives.
  • Nuts – In case you need more protein and healthy fats, along with gut-friendly dietary fiber, feel free to throw in a handful of walnuts or pecans.
  • Seeds – Maybe you’re not into nuts but you enjoy seeds. Why not use a handful of pumpkin seeds or sunflower seeds instead of those walnuts?!
  • Crème Fraîche – If you’re looking for a creamy variation to this dessert bowl, feel free to fold in a few spoons of crème fraîche. You could also use yogurt instead and the results will be similar.
  • Spices – Add half a teaspoon of cinnamon or cardamom powder to this refreshing dessert and you’ll be surprised of the flavor upgrade.

Ingredients

  • 300 g frozen blueberries (I used wild blueberries)
  • 2 medium bananas (peeled and sliced)
  • 50 g coconut chips (roasted version)

Instructions

  • Add blueberries and sliced banana into a bowl, and mix until well combined.
  • Throw in coconut chips and mix for a few more seconds.
  • Portion as needed. Serve fresh and enjoy!

  • Texture: a bit crunchy from coconut chips
  • Taste: refreshing, sweet from banana, a bit of coconut taste
