Ingredients needed

I won’t get into the secrets of making the best salad ever, because this writing isn’t about that. I simply want to share with you an easy summer salad recipe made with cherry tomatoes, onions, cucumber, bell pepper, carrots, kalamata olives, hard boiled eggs and a few surprise ingredients like walnuts, pineapple and raisins. You won’t need anything else, not even a salad dressing.

In a nutshell, these are the ingredients that go into our Vegetarian Red Summer Salad:

  • hard boiled eggs
  • fresh pineapple
  • cherry tomatoes
  • red or white onion
  • raisins
  • cucumber
  • walnuts
  • red bell pepper
  • carrot
  • kalamata olives
  • Himalayan salt

Reasons to love this red summer salad

I love this salad because it’s super easy to put together, delicious and comes packed with fresh vegetables, healthy fats and quality proteins. Plus it’s also loaded with all the micronutrients that these veggies bring to the table. Works great as grab and go lunch for all those busy days, but it’s also perfect for a light dinner or served as a side dish.

Talking about simplicity, I’ve put together this delicious salad with the fresh ingredients that I’ve got from my local supermarket in Kristiansand, Norway. Except for the eggs, I bought all the fresh ingredients from my local Meny Food Store; there everything was already nicely pre-cut, including the pineapple and olives. As for those hard boiled eggs, the plate and the wooden fork, they all came from my local IKEA Restaurant.

Pro Tip: Want to make this salad vegan? No worries, just skip the hard boiled eggs and include more walnuts and kalamata olives. You could also add in some seeds, think sunflower seeds or pumpkin seeds.

Ingredients

  • 2 hard boiled eggs (peeled, sliced)
  • 2 slices fresh pineapple (cut in triangles)
  • handful cherry tomatoes
  • 1/2 red or white onion (cubed)
  • 2 tbsp raisins
  • 5 cm cucumber (slices)
  • handful walnuts
  • 1 red bell pepper
  • 1 big carrot (grated)
  • 2 tbsp kalamata olives
  • pinch of Himalayan salt

Instructions

  • Prepare all the ingredients as indicated above.
  • Add everything into a salad bowl.
  • Mix a bit to spread everything nicely.
  • That was it! Serve and enjoy all day long!

Feel free to skip any of the ingredients if you don’t like eating it. The same it true for including other ingredients, if you happen to like them.
