Pro Tip: The pink color of our smoothie comes mainly from using one red beet and pomegranate seeds, both of which are packed with phytonutrients (see their deep red color). When it comes to that creamy smooth texture of our smoothie, we used a combination of avocado and extra virgin coconut oil, with a bit of almond butter.

For a fresh, delicious and nutritious breakfast try our Winter Pink Smoothie that comes packed with real nutrients from vegetables, a few fruits and superfoods. Creamy, sweet and spicy, this pink smoothie was the perfect way to boost our energy during those cold winter days.

Equipment

  • Blender

Ingredients

  • 2 medium avocados (skin and seed removed)
  • 1/2 small pomegranate (seeds only)
  • 1/2 green kapia pepper (remove seeds)
  • 1 red beet (peeled and cut)
  • 1 big golden apple (remove seeds)
  • 1 stalk fennel (chopped)
  • 2 tbsp almond butter
  • 1.5 tbsp chia and hemp seeds
  • 1.5 tbsp extra virgin coconut oil
  • 3 squares dark chocolate (85% or more)
  • 1/2 tsp cinnamon powder
  • 1/2 tsp cardamom powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp ginger powder
  • pinch of vanilla powder
  • 1/2 tsp Himalayan salt
  • decorated with pomegranate seeds
  • 450 ml water (or enough to cover ingredients)

Instructions

  • Prepare all the ingredients according to my notes in paranthesis.
  • Blend everything until you obtain the desired texture.
  • Enjoy fresh or store in the fridge for 2-3 days.
