What you’ll need for this easy vegetarian plate
When it comes to the food that we consume we try to keep things healthy and simple. And this vegetarian platter is no different when it comes to the ingredients used but also the taste.
Speaking of the ingredients list, it’s good to know that you won’t need too many ingredients for this healthy meal. Yet the flavors will turn out amazing, and without spending too much money either.
These are the ingredients that we used for our little Vegetarian French Platter:
- Frozen Broccoli (boiled) – Broccoli is loaded with both micro and macro nutrients, as well as lots of healthy fiber, which makes it the perfect choice for any meal, not only this one.
- La Brique (soft French cheese) – We used this soft cheese from France, which is quite soft and can easily be spread on bread.
- Leeks – It’s here to complement both the boiled broccoli and French cheese. Instead of leeks you can choose to use spring onion, red onion, or shallots.
- Pickled or Fermented Cucumbers – Aim for fermented cucumbers that aren’t pasteurized, since unpasteurized veggies have those live cultured bacteria (probiotics) which help keep your gut healthy. Otherwise, choose pickled cucumbers without any kind of additives or preservatives.
- Green Olives – Use the kind of olives you like here. We opted for green olives from Greece but Kalamata olves or dried Zarimenes olives also work great.
- Kapia Red Pepper – I like those long red peppers that are a bit sweet, but you can definitely go for other types like the classic red bell pepper. The only difference is that kapia peppers are sweeter compared to bell peppers (at least where I live).
- Basil Leaves (fresh) – We love the fresh aroma of basil leaves in the summer. Alternatively, use fresh parsley or dill, but you’ll have to chop those and spread them over the veggies.
- Sourdough Bread – True sourdough bread is made without additives and the sourdough started will take care of fermenting almost all of the gluten from wheat or rye. That is the reason why true sourdough bread tastes a bit sour-ish, but it’s also the reason why sourdough bread will complement our French cheese perfectly.
- Himalayan Salt (optional) – Optionally use a bit of salt on top of the boiled broccoli.
Pro Tip: When it comes to bread, it’s quite important in this French platter because you cannot truly enjoy cheese without a few slices of quality bread. My advice is to make an effort and choose a quality bread, usually sourdough bread or Danish rye bread work best. The taste of true sourdough bread will complement the soft cheese perfectly, and together with those vegetables will take you through a wonderful culinary adventure.
This vegetarian plate can be upgraded
We enjoyed this simple meal exactly as we photographed it, but there is always room for improvement, right? Here are a few ideas on how you can switch-up some of the ingredients or complete this vegetarian platter with other extras that will add variation as well as different nutrients to your meal.
These are my favorite ways to upgrade this healthy veggie meal:
- Nuts – Use a handful of your favorite nuts to add a bit of crunchiness to this meal, as well as more fiber and an assortment of nutrients. For this type of meal, I usually prefer to use either walnuts or pecans.
- Dried Fruit – Adding something sweet besides cheese is what the French people do quite often. For an enhanced flavor, my suggestion is to add a handful of dried fruits like raisins, figs, dates or prunes.
- Other Veggies – With every meal, there’s room for more veggies, right! For this French platter, you could add extra boiled veggies like green peas or cauliflower, and raw veggies like celery sticks, onions, radishes, lettuce, or chili peppers.
- Fruits – You’ll be surprised of how much a bit of fruit can change-up a meal. Add a sliced apple or a pear on the side and see what happens to your taste buds!
- Other Cheeses – In case you don’t have access to La Brique cheese, you can use other types of French soft cheese, and the experience won’t change that much. One of the best alternatives is to choose brie cheese, which comes in different variations and can easily be found almost everywhere.
Guys, this Vegetarian French Platter was pure delight, abd I must confess that we enjoyed this sort of meal with vegetables and cheese over and over again. And it always turned out different and super delicious!

Vegetarian French Platter: La Brique with Vegetables
Ingredients
- 300 g frozen broccoli (boiled)
- 200 g La Brique French soft cheese (I used La Brique from President)
- 10 slices leeks
- 4 pickled or fermented cucumbers
- 6-8 green olives (sliced, as needed)
- 1/2 kapia red pepper
- a few leaves basil
- 4 slices sourdough bread
- pinch of salt (optional, for the boiled broccoli)
Instructions
- Start by boiling the broccoli. I like using frozen broccoli and cooking it for a few minutes in boiling water. Once done, I remove the water and transfer the boiled broccoli onto a plate, after which I add salt on top.
- Prepare all the other ingredients by cutting them into slices, as you feel like.
- Place everything onto a wooden chopping board and arrange them creatively. After all, we eat with our minds, so make it a priority to arrange everything nicely.
- How to serve: Serve with your favorite kind of bread. You can definitely make super delicious sandwiches by adding brie over bread, and vegetables on top (this is what we did), or simply eat everything with a fork. Enjoy!
I love French cheese and this little platter looks so tempting right now :))
