Fresh Superfood Keto Smoothie featuring a combination of vegetables, berries and healthy fats, blended into a delicious and refreshing breakfast smoothie that will help you burn fat for energy instead of carbs.

Ingredients

Macadamia Milk

  • 80-100 g macadamia nuts
  • 200 ml water (for making the macadamia milk)

Smoothie

  • 150 ml homemade macadamia milk (see recipe in the post above or the Macadamia Milk section in Instructions)
  • max 100 g frozen broccoli
  • 1 red beet (peeled)
  • 1 red kapia or bell pepper
  • 1 slice fennel
  • 1 medium avocado (skin and seed removed)
  • 1 tbsp extra virgin coconut oil
  • 3-4 tsp cacao butter
  • 5-6 leaves pointed cabbage
  • 2 tbsp frozen sea buckthorn
  • 4 tbsp frozen cranberries
  • 1 tsp ginger powder
  • 1 tsp fenugreek powder (optional)
  • 2 tsp pomegranate powder (optional)
  • 1 tsp dandelion powder (optional)
  • 1 tsp raw cacao powder
  • 1 dried date (no seed, chopped)
  • 400-500 ml water (on top of the one used for the macadamia milk)

Instructions

Macadamia Milk

  • Start by making the macadamia milk. Add macadamia nuts into the blender. Add the water required for making the milk.
  • Blend on medium to high speed until all the nuts have been transformed into nut milk. You’ll know the macadamia milk will be ready when the blender contents will turn white.
  • You can use the milk as is (with pulp) or you can strain it, separating the pulp from the liquid, and only use the liquid for smoothie.

Smoothie

  • Add all the smoothie ingredients into the blender, on top of the freshly made macadamia milk.
  • Add all the water required for the smoothie.
  • Blend on medium to high speed until you obtain a creamy texture. If you feel like your blender needs a boost, use the pulse function a few times to help mix everything better.
  • That’s it! Serve fresh or store in the fridge for up to 2 days.

Notes

  • Color: light pink with a red tint
  • Texture: you can feel the texture of the fresh macadamia nuts milk
  • Taste: spicy with a light minty taste

This recipe is made in two parts: the macadamia milk and the smoothie. If you already have macadamia milk in your fridge, skip the first step and go directly to the smoothie part.
Make sure to store this smoothie in the fridge and consume it as soon as possible (max 2 days). Since we’re using freshly made macadamia milk, there’s always a chance that it’ll go bad faster if stored at room temperature (and even in a fridge that is not cold enough).
