If you love avocado and vegetables together then this easy summer salad might be perfect for you! Delicious and refreshing, this salad is packed with healthy nutrients and ready in 5 minutes. Would you care to try it?

Equipment

  • Salad Bowl

Ingredients

  • 1 medium avocado (skin and seed removed, slices)
  • 1 small red onion (chopped)
  • 5 cm leeks (sliced)
  • 1/2 red bell pepper (slices)
  • 1/2 cucumber (slices, cut in 4s)
  • 1/2 stick celery (sliced small)
  • lime juice (as needed)
  • 1-2 tbsp extra virgin olive oil
  • pinch of salt (I used white mountain salt)

Instructions

  • Prepare all the plants as indicated (peel, cut, chop) and add them into your favorite salad bowl.
  • Pour extra virgin olive oil over veggies and mix to combine.
  • Add optional lime juice and salt. Mix again to incorporate into salad.
  • That was it! Serve as a side to your meal or enjoy as is since this summer salad in a filler by itself.

Notes

You can store this salad in the fridge for up to 2 days. Use an airtight container or cover the salad bowl with a plate.
You can always upgrade this salad with different extras like nuts, seeds, spicy peppers, your favorite veggies or even a tablespoon of raisins to change-up the flavors a bit.
