Start by adding all the chocolate ingredients into a double boiler ... cacao mass, cacao butter, coconut sugar, vanilla and cinnamon.
Once everything has combined into a chocolate paste, remove from heat and set aside to cool down for a few minutes.
In a small flat bottom dish (glass or ceramic), add chopped walnuts and spread them on the entire surface of the dish.
Pour chocolate paste over walnuts covering the entire surface of the dish. Since the chocolate paste is rather liquid, it’s ok if the walnuts will float around a bit.
Transfer chocolate into the fridge for 4-6 hours to set or until it becomes rock solid.
Remove from the fridge when solid and break down by hand or cut into bars.
