This big-small salad with pomegranate is all about eating plenty of healthy nutrients in a small bowl. It’s easy to make, it’s fresh, super healthy and ready in 5 minutes. Enjoy and share!

Equipment

  • Salad Bowl

Ingredients

  • leafy greens of your choice (lettuce, baby spinach, cabbage)
  • 2 tomatoes (slices)
  • 3 hard boiled eggs (cut in half)
  • 1 red pepper (cubed)
  • 1-2 spring onions (scallions, chopped)
  • 1/2 chili pepper (chopped)
  • 1/2 jalapeño (chopped)
  • pomegranate seeds (as needed)
  • fresh lime juice
  • 1/2 avocado (seedless and sliced, optional)
  • pinch of Himalayan salt (optional)

Instructions

  • Prepare all the ingredients as indicated and add them to your salad bowl.
  • Add lime juice and optional salt.
  • Mix a bit to spread everything nicely.
  • That was it! Serve and enjoy all day long!

Notes

Feel free to use your favorite type of leafy greens. Check-out a few of my favorites: romaine lettuce, iceberg lettuce, red leaf, frisee, nappa cabbage, spring cabbage, baby spinach.
