Refreshing Salad with French Brie and Other Goodies

Nourish your body and keep hunger away with this refreshing salad enriched with your choice of brie cheese. Enjoy as late breakfast, lunch or dinner!

Ingredients

  • 100-150 g baby spinach
  • 20 g rucola (optional)
  • 2 slices pineapple (cut big)
  • 1 carrot (grated)
  • 15-20 cherry tomatoes
  • 1 red onion (chopped)
  • 1/2 cucumber (slices)
  • 1 bell pepper (cut big)
  • 2 tbsp hemp seeds
  • 3-4 boiled eggs
  • 100 g brie cheese (preferably French brie)

Instructions

  • Add everything into a salad bowl, except for the hemp seeds, eggs and brie cheese.
  • Mix a bit to spread everything nicely.
  • Cut the brie cheese into big slices and add on top of the salad.
  • Now add boiled eggs (whole or cut in half).
  • Spread hemp seeds over the entire salad.
  • That was it! Portion and serve all day long!

Notes

I like buying true French brie cheese of different types, preferably made by using raw milk. What I discovered is that a true French brie can really make a salad, so I strive to always buy the best brie cheese that I can find.
Feel free to skip any of the ingredients if you don’t like it. You can swap it with one of the extras or skip it all-together.
Salads are all about playing with those fresh ingredients and making it yours. Play with the quantities and the ingredients and find your salad inspiration.
