This vegetarian red summer salad is all about putting together a delicious and healthy salad in a matter of minutes. Enjoy as late breakfast, quick lunch or light dinner!
Ingredients
2hard boiled eggs(peeled, sliced)
2slicesfresh pineapple(cut in triangles)
handfulcherry tomatoes
1/2red or white onion(cubed)
2tbspraisins
5cmcucumber(slices)
handfulwalnuts
1red bell pepper
1bigcarrot(grated)
2tbspkalamata olives
pinch ofHimalayan salt
Instructions
Prepare all the ingredients as indicated above.
Add everything into a salad bowl.
Mix a bit to spread everything nicely.
