Easy Vegetarian French Platter made with different plants and a special soft cheese called La Brique. Delicious, healthy, and so satisfying!
Ingredients
300gfrozen broccoli(boiled)
200gLa Brique French soft cheese(I used La Brique from President)
10slicesleeks
4pickled or fermented cucumbers
6-8green olives(sliced, as needed)
1/2kapia red pepper
a fewleaves basil
4slicessourdough bread
pinch ofsalt(optional, for the boiled broccoli)
Instructions
Start by boiling the broccoli. I like using frozen broccoli and cooking it for a few minutes in boiling water. Once done, I remove the water and transfer the boiled broccoli onto a plate, after which I add salt on top.
Prepare all the other ingredients by cutting them into slices, as you feel like.
Place everything onto a wooden chopping board and arrange them creatively. After all, we eat with our minds, so make it a priority to arrange everything nicely.
How to serve: Serve with your favorite kind of bread. You can definitely make super delicious sandwiches by adding brie over bread, and vegetables on top (this is what we did), or simply eat everything with a fork. Enjoy!
Notes
Do not throw away the water that you used to boil the broccoli. Just transfer it into a mug, add a pinch of salt, and drink it like hot tea. It tastes like soup and is loaded with vitamins and minerals, and perfect as an electrolyte drink for recovery.In case you don’t have access to La Brique cheese, you can use any other type of French soft cheese. For the best alternative, go with brie cheese which comes in many different variations and can easily be found almost anywhere.
